Holiday Recipes- Breakfast

So with the holidays coming up, I thought I would share with you all some of my favorite recipes.  I like to cook and am always on the hunt for new recipes, but I wanted to share a few of my "staple" recipes.  These are the REALLY good ones and I have been making them for years. :)  I am a huge breakfast person to the point where I even like breakfast food for dinner.  Call me crazy, but it's good.  But here are a few of my favorite breakfast recipes.  I hope you and your family enjoy them as much as I do. :)



My first favorite breakfast recipe is from The American Country Inn and Bed And Breakfast Cookbook.  This cookbook belongs to my mother, but I tend to borrow (steal) it whenever I can.  Maybe I'll get my own copy one day?  :)  It's my FAVORITE cookbook!  It's up there with Martha Stewart, Barefoot Contessa, and Paula Deen, yes the recipes are that good.  It's a collection of recipes from tons of top Bed and Breakfasts around the Unites States.  It's the bomb diggity.  Okay, so here is a great breakfast recipe for Strata.  You can make it the night before and then just bake it in the morning, Easy peasy!  And it's delish!

Strata
The American Country Inn and Bed and Breakfast Cookbook

Ingredients
12 slices of bread, remove crust and cut into cubes. (I use a fresh baked loaf of white bread from our local bakery...it's my way of being fancy)
1 1/2 cups diced ham (You can buy diced ham at the grocery store)
1 cup diced green pepper
1/2 cup finely minced onion
3/4 cup grated Cheddar cheese (I use shredded cheese from the grocery store)
3/4 cup grated Jack cheese (shredded store kind)
7 eggs
1 teaspoon salt
3 teaspoons dry mustard
3 cups milk

Grease a 9x13-inch pan and place bread on the bottom. Combine ham, green pepper, onion, and cheese, pour over the bread. Mix together remaining ingredients and poor over strata. Let sit overnight in the refridgerator (this is key). In the morning, bake in a 325 degree oven for 1 hour. Serves 6-8.

Let cool before serving, strata will be more "firm".  Just sayin... :)



And my second favorite breakfast recipe takes a little bit longer to make, but it is SO worth it.  I made this recipe for my in laws last year and they were IMPRESSED.  Gold star for me.... :)  It's also a Barefoot Contessa recipe.  Ina Garten is a genius!  Love her...

Banana Sour Cream Pancakes
(Barefoot Contessa Recipe)

Ingredients
1 1/2 cups of all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt (I don't use kosher salt...whoops)
1/2 cup sour cream
3/4 cups plus 1 tablespoon milk
2 extra-large eggs
1 teaspoon pure vanilla extract (I add more...because I love it)
1 teaspoon grated lemon zest (this is optional...my husband does not like lemon anything, but I do..he's a weirdo)
Unsalted butter
2 ripe bananas, diced, plus extra for serving
Pure maple syrup (pure maple syrup is hella expensive...Mrs. Butterworth works just fine)

In a medium bowl, sift together flour, sugar, baking powder, and salt. Whick together sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.
Melt 1 tablespoon of butter in large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan. Add (sprinkle) tablespoon of bananas on each pancake. Cook for 2-3 minutes, until bubbles appear on top and the underside is nicely brown. Flip the pancakes and cook for another minute, until browned. Wipe out the pan with a paper towel, add more butter to pan. Continue cooking pancakes until all batter is used. Serve with sliced bananas, butter, and maple syrup.
*I make these on our griddle, huge time saver and easy clean up.
*And they don't taste like sour cream...they are good I promise. :)

I Heart Faces - "My Story In Photos: Dessert Recipe Edition"

Blueberry Sour Cream Coffee Cake



 
This week's I Heart Faces theme is "My Story In Photos: Dessert Recipe Edition".  We are to include and share one of our favorite dessert recipes.  We all know (well you do now) my favorite dessert is Red Velvet Cake, which I have made many many times.  But since yesterday was Easter, I decided to try a new recipe and made a  Blueberry Sour Cream Coffee Cake .  This recipe was easy to follow and it turned out perfectly.  AND most importantly, it was very tastey.  Here is a step-by-step "dessert documentation."

Set rack in the middle of your oven and preheat to 350*F


Butter a 10" bundt pan and lightly dust the inside with flour.


Cream together sugar and butter until light and fluffy.





Add eggs, blend well.


Add sour cream


Add vanilla, then mix until combined.


In a seperate bowl, add flour, baking soda, and salt


Whisk dry ingredients together.


Gently fold the flour mixture into the batter.





Reserve 1/2 cup of batter and mix with 3/4 of the jar of blueberry jam.


Set mixture aside.  (It's purple!..hehe...)


Pour 3/4 remaining batter into the prepared pan.


Create a slight "trough" through the batter with a spatula.
(This was the hardest part of the whole recipe)


Gently spoon the blueberry mix into the batter "trough".
(I need to work on my "troughing" skills...)


Pout the remaining batter over the jam and smooth the top.


Bake for about 60 minutes, or until the sides of the cake pull away from the pan and a toothpick inserted in the center comes out clean. 


Cool on a wire rack for at least 30 minutes.
(I do not have a wire rack..so I used every hot pad I had...works like a charm)


Turn onto a plate, and then sprinkle with powdered sugar and drizzle with remaining jam.


Because I love cake stands and find any excuse to use one, I placed 3 sheets of wax paper over the cake stand.  Then placed the cake on top.


I then heated the remaining jam in the microwave for 15 seconds, then brushed on remaining jam as a glaze.


Covering the entire surface.


Then sprinkle powdered sugar over the top.
(I do not have a sifter or a strainer...so I used a cheese grater...think outside the box...)


Remove wax paper...THEN...


TAH DAH!  Blueberry Sour Cream Coffee Cake!  Modeled by my gorgeous milk glass cake stand. :)


Perfect with your favorite flavored coffee (mine is french vanilla or creme brulee). 
And a scoop of vanilla ice cream... :)

Happy Easter!


Hello everyone!  I just wanted to wish everyone a Happy Easter!  Today I am looking forward to spending time with family, planting flowers in my garden, making homemade lemonade, and trying out a new recipe for Blueberry Sour Cream Coffee Cake .  I'm excited! 

And the picture above is of me when I was 3 years old.  I had just finished an Easter egg hunt and was looking through all of my goodies.  My grandpa was reading the newspaper the next day and found this picture of me.  We had no clue it had been taken.  My mom has saved it in our family photo album ever since.  Just goes to show how a picture can capture that special moment without you even knowing. 
Which is why I love photography so much... :)

Quick Jambalaya

I hope you all enjoyed your Valentine's Day!  It snowed like crazy here, so the DH and I stayed in and I made us a special spicy love felt dinner.  Also, as part of my 101 things in 1001 days I am determined to try a new recipe each week.  SO I thought this would be the perfect time.  I found a yummy recipe for a Quick Jambalaya on my Martha's website.  I thought the recipe was pretty easy to follow and the prep/cook time wasn't too bad either.  I used my handy dandy Pampered Chef Food Chopper, so chopping took no time at all.  I love that thing!  Lots of onions, green peppers, and garlic...oh my! :)  We didn't have any Andouille sausage, so we used spicy sausage instead.  Just added a side of cornbread and tah dah!  Yummy spicy Jambalaya.  Tim and I enjoyed our Valentine's Day Jambalaya in the family room all cozied up on the couch in front of the fireplace and watched the snow... with a big glass of milk.  Talk about romantic people! :)  Tim gave this recipe two thumbs up!  I thought it was good and tasty....and filling.  Next time I may add some shrimp (I love seafood) and try and find Andouille sausage.  But that's just my opinion....  Once again I gotta give a shout out to my girl Martha Stewart for another fabulous recipe!  Here are some pics.  Enjoy!

New Recipe...Sticky Lemon Chicken

SO part of my 101 things to do is to try a new recipe every week.  This week, thanks to my friend Michelle, I found this awesome recipe website called Food Gawker.  Let me just tell you, this website is AH MAZING.  You just go to the website and you will be sucked in for hours, at least I was anyways.  The DH and I decided on this Sticky Lemon Chicken recipe.  We also decided to to add a side of white rice and a side of steamed broccoli.  My review, YUMMO!  The sauce was very asian/lemony/tangy...which I love.  I even added some of the flavorful juice to my rice.  It was very healthy, light, yet filling.  A keeper in my book!
